Dairy cultures

Chr.Hansen has a strong tradition for supplying innovative products and know-how to the dairy industry. Since we launched industrial produced cultures more than a century ago - and later introduced concentrated, freeze dried dairy cultures - Chr. Hansen has grown to become the world's no. 1 provider of dairy cultures. Today we have extended our product range to the dairy industry with natural preservatives, colors, flavors, seasonings and natural, fermented and microbial coagulants.

The cornerstones of our success are our commitment to R&D, flexibility - and most importantly our world class technical service to customers. In a partnership with Chr. Hansen our customers gain access to valuable know-how and inspiration, that help them market new, innovative products within fast growing segments like dairy beverages, low fat dairy products, children products and products with added health benefits.

Chr. Hansen strive to improve convenience and stability in our customers production processes. One of our most well known milestones in that field is the Direct Vat SetTM system, which has become a standard in the industry. DVS has made bulk starter equipment unnecessary and improved dairy products in terms of consistency, extension of shelf life and product variety.

Cheese cultures

Chr. Hansen offers eight quality dairy culture lines for cheese making, covering a host of different cheeses: soft cheese, feta, cottage cheese, continental cheese, cheddar, grana, pasta filata and emmenthal. Each line contains bacterial cultures offering properties benefiting the production of a particular cheese or type of cheese in terms of flavor, texture and appearance. We are confident you will find a culture suited to your needs in our range.

Fermented milk cultures

We offer two culture ranges for fermented milk products: Yo-Flex®, eXact®. Yo-Flex is series of mixed single-strain cultures specifically for use in yoghurt, while our exact range consists of mesophilic cultures and caters to cultured milk products such as buttermilk, sour cream and fresh cheese. Both ranges offer a spectrum of options regarding taste and viscosity.

Probiotic cultures

Chr. Hansen is heavily involved in the research of probiotic bacteria. Our range of probiotic dairy cultures is marked under nu-trish® name. Nu-trish is divided into three groups of products. Probio-Tec® products contain strains that are backed by a high level of clinical documentation in addition to excellent stability in both food products and the human gastrointestinal system. Yo-Fast® yoghurt cultures are blends that contain probiotics only - mainly single strains with generic health benefits. Other nu-trish products are cultures that contain probiotics only - mainly single strains with generic health benefits or limited clinical documentation.

Flavor and ripening cultures

To meet special demands, such as good phage resistance in production or enhanced flavor, we offer specialized culture series such as SWING, Flavor Control and pHage Control cultures.

SWING is a series of molds, yeasts and ripening cultures selected for their particular aromatic characteristics and ability to modify taste, texture and appearance.

Flavor Control cultures have been developed specifically to enhance flavor and overall cheese quality without affecting the cheesemaking process. Other important features that we have built into our flavor and ripening cultures are reduction of ripening cultures are reduction of ripening times in some cheeses, such as cheddar, as well as enhanced flavor in low fat cheeses.

pH Control cultures

A selection of our mesophilic cultures is marketed under the name phage Control. These cultures have been developed to be particularly resistant to attack from bacteriophages. These robust cultures are used in applications demanding good phage resistance and fast acid development, such as in the production of cheddar or cottage cheese.

DVS®

All of our cultures come in convenient DVS (Direct Vat Set) form for direct inoculation in milk. DVS cultures need no activation or other treatment prior to use and offer a number of advantages in terms of flexibility of use, consistent performance and possibility of using customized culture blends.
